High Omega-3 Mack Salad

š Mack Salad
Ingredients:
1 can wild mackerel
3-4 anchovies, finely diced
1/3 cup chopped celery
3 Tbsp avocado-oil based mayo
1/2 avocado, diced
4-5 mini cucumbers
Salt + pepper
Optional: cooked lentils, hemp hearts
Instructions:
Mix mackerel, anchovies, celery, mayo, salt + pepper.
Fold in avocado.
Half mini cucumbers and use as scoop with mixture, top lentils/hemp hearts if using.

Fiber: 4-6 g (8-10 g with lentils/hemp hearts)
